A salmon and a Dutchess, swimming in Vodka... owww! We both liked it, that’s for sure. And the salmon received a big A (I won’t mention what I gave myself, but I know you’re about to say a D from drunk hahaha!), it was soooo amazingly delicious!  And pssstt…..I think it was because of the Vodka, but I’m not quite sure….

About that goat that’s been hanging around here, oh don’t worry, I mean goat cheese! I know some of you (yes you!!) will say something like “eeewww, first Bulgur and now this!” But believe me, even if you don’t like it, the Vodka and the spices and herbs match so good with this that you won’t even notice it’s goat cheese anymore (ok, almost then) but if you have added enough Vodka (to your glass) that might work as some sort of beer goggles too. Vodka goggles, what an idea, I found this on the internet (purely coincidental) read this:

Vodka can also help make the opposite sex look more attractive than they really are, or plied with enough vodka, a member of the opposite sex can find you more attractive than you really are! So if all else fails, tip the bottle up and drink it!!

Told ya… gimme more…!

If you would like to know more about the usefulness that Vodka seems to be having (other than getting people inebriated), keep an eye on the Bar Talk Page these days…you’ll be amazed!

But now we’re going to cook, while we still can!! It’s an easy one, as every recipe should be. Oh and it’s important not to use a large oven tray, the smaller the better because now the salmon will bubble nicely in the Vodka! And yes, you’re allowed to stay close to the oven, that smell!!

2 salmon fillets with skin
1 garlic clove, mashed
1/2 teaspoon lemon pepper seasoning
½ teaspoon lemon juice
1 teaspoon dried Italian herbs
½ teaspoon dried chili flakes (take less if you don’t like too much heat)
3 tablespoons  olive oil
¼ cup Vodka (yes I realize that IS a lot, use less if you think that’s better for you…)
1.5 cup soft goat cheese

Preheat the oven to 425F.

In a small bowl, mix the olive oil with the garlic, lemon juice, lemon pepper seasoning, Italian herbs, chili flakes and stir. Add the Vodka.

Place the salmon fillets in a small oven tray (skin down) and pour half of this mixture over the salmon.

Crumble the goat cheese and arrange the cheese on top of the salmon. Drizzle with the remaining Vodka mixture (ehm I mean olive oil mixture).

Put it in the oven for 25 minutes and…………dig in!!!

Let’s grill some boozy fish again my dear friends. It’s about time isn’t it!? Oh boy, do I have a recipe for you!! It looks amazing, if I may say so myself but it’s hardly any work, awesome! Since the Burgerman is too busy (I heard he’s testing some new boozy recipes hehehe) it’s my job to entertain you today, and no I don’t do requests on that part, only cooking requests… but maybe I can be bribed with a bottle of ehm…any booze?? Go ahead, try it, we’ll find out if it works soon enough, and if it didn’t work, thanks for the drinks!!
Oh that’s not nice huh….must be the lack of alcohol! I’m really glad it’s Wednesday today, Wine-Wednesday and Hump Day, I don’t think it’s a coincidence that those two take place on one day….

But you need food too, so you light up that grill, pour me some wine and let’s get started! I’ll tell you exactly what to do!

What do you need?

A salmon fillet
A handful of fresh spinach
½ a package of cream cheese
½ a scallion, only the green part, finely diced
Roasted pine nuts:

Pepper/salt
1 cup of heavy cream
1 teaspoon of dried chile flakes (or less, what you prefer)
And let’s not forget: the booze!!! Vodka!! ½ a cup and some for yourself!!

Make a horizontal slice in the salmon but not completely until the end.

Bring water to a boil and add the spinach, boil for 30 seconds and drain. Rinse with cold water and squeeze out the water.

Mix the cream cheese with the pine nuts, pepper/salt and the scallion.

Add the spinach and stuff the salmon with this creamy mixture.

Season the salmon with some pepper and put it on the hot grill (be careful, the stuffing might start dripping when it gets hot!).

In the meantime bring the heavy cream with the Vodka and the chile flakes to a boil, let it simmer and add some flour or sauce thickener in order to thicken the sauce, add pepper to taste.

Now that I have your attention......

First of all, before all of you get your panties in a wad, don't let your mind take you too far into the gutter... (you may find some of our friends there)

S & M Burgers are just another way to describe my new recipe using "S"eafood and "M"eat, or as some of you fancy folks might call them~ Surf & Turf Burgers.

I'm sticking with S & M Burgers because, with my recipe, you can use any meat you desire with the seafood. (Ground Beef, Steak, or Poultry) This time I'm using Ground Turkey (because it was on sale: 3 lbs for $5.00 on Fridays at the market!)

Now let's be honest...I could have gone to the store and purchased expensive meats and seafood, but I wasn't really sure how this was going to turn out, so I stuck with the low cost alternatives..as you will soon see. It was truly delicious and I actually was surprised with the outcome.

So let's get started......

First ingredients were Two cans of Albacore Tuna and One Can of "Chicken of the Sea" "Fish Steaks" in a can with Cajun Seasoning.
(See I told you we were going to use some inexpensive alternatives....)

Next, to stay with the theme of S & M, we needed two bottles of wine. Sauvignon Blanc and Merlot (see get it?..S & M for the Sav & Merlot)

I took the 3 lbs of Ground Turkey and put it in a bowl and added the two cans of tuna and one can of fish steaks, mixed well and added salt, pepper, and some seafood seasoning from the cupboard and then poured in a 1/2 cup of the Sav and a 1/2 cup of the Merlot................
Mix all the ingredients thoroughly in the bowl..(Let me know if I'm going too fast..)

After they were all mixed well, and my my hands were a mess, I made the S & M burger patties (you should get approx. 12 patties total if you measure better than me).

I placed six of the S & M patties on the grill and put the others in the freezer for later.

I poured myself a couple glasses of wine, and just in case the burgers were a flop I grabbed two salmon filets from the fridge, seasoned them with pepper, salt, rosemary, lemon and basil as a backup plan. (Sometimes you gotta improvise when I'm in the kitchen)

Threw those babies on the grill with the burgers and drank some more wine. That bottle up above wasn't going to get empty all by itself!

But I wasn't done yet..was bored, so I grabbed some shrimp, olives, onions, mushrooms, tomatoes, and artichoke hearts and slapped them on some skewers for some Shrimp Kabobs. Gotta have some sort of veggies while performing S & M creations. Man or woman can't live by that alone.

Coated 1/2 the Shrimp Kabobs with my secret Bourbon BBQ sauce and 1/2 with Cranberry Vodka Sauce and then I finished the bottle of wine and figured that was probably enough......(food)

The meal was fantastic and the S & M Burgers were amazing. They tasted like true Surf and Turf Burgers! In fact, I have lots of leftovers in case you are out my way.

But-Make sure to leave your whips and chains at the door.....

PS-What do ya think Dutchess? Did The Burgerman out-do himself this time? I bet you are hungry for some of these Burgers right now!!
